The azuki bean (also known as adzuki or red mung bean), is an annual vine widely cultivated throughout East Asia for its small (approximately 0.20 inch long) bean. The cultivars most familiar in Northeast Asia have a uniform red color, but white, black, gray, and variously mottled varieties also are known. Characteristic sweet nutty flavour, much favoured in Japan. Soak 3-5 hrs. Cook 1 hour or pressure cook 15mins, simmer until soft for delicious soups, pates etc. Will sprout into tasty bean sprout salad (grows in combination best) e.g. Essential 3-day sprout mix.
