Mustard seeds are the small seeds of the various mustard plants. The seeds are about 2mm in diameter, and may be coloured from yellowish white to black. They are important spices in many regional cuisines. The seeds can come from three different plants: black mustard (B. nigra), brown Indian mustard (B. juncea), and white mustard (B. hirta/Sinapis alba). It is often referred to as "eye of newt." Mustard seeds generally take 3-10 days to germinate if placed under the proper conditions, which include a cold atmosphere and relatively moist soil. Mature mustard plants grow into shrubs. Mustard grows well in temperate regions. Major producers of mustard seeds include Hungary, Great Britain, India, Canada (90%) and the United States. Brown and black mustard seeds return higher yields than their yellow counterparts. Like other Brassicas, mustard seeds contain plentiful amounts of phytonutrients called glucosinolates. The seeds also contain myrosinase enzymes that can break apart the glucosinolates into other phytonutrients called isothiocyanates. The isothiocyanates in mustard seed (and other Brassicas) have been repeatedly studied for their anti-cancer effects. In animal studies - and particularly in studies involving the gastrointestinal tract and colorectal cancer - intake of isothiocyanates has been shown to inhibit growth of existing cancer cells and to be protective against the formation of such cells.

Nettle is the common name for between 30-45 species of flowering plants of the genus Urtica in the family Urticaceae, with a cosmopolitan though mainly temperate distribution. They are mostly herbaceous perennial plants, but some are annual and a few are shrubby. Urtication, or flogging with nettles, is the process of deliberately applying stinging nettles to the skin in order to provoke inflammation. An agent thus used is known as a rubefacient (i.e. something that causes redness). This is done as a folk remedy for rheumatism, as it provides temporary relief from pain. Extracts can be used to treat arthritis, anemia, hay fever, kidney problems, and pain. Nettle leaf is a herb that has a long tradition of use as an adjuvant remedy in the treatment of arthritis in Germany. Nettle leaf extract contains active compounds that reduce TNF-alpha and other inflammatory cytokines. Stinging Nettle has a flavour similar to spinach when cooked, and is rich in vitamins A, C, D, iron, potassium, manganese, and calcium. Young plants were harvested by Native Americans and used as a cooked plant in spring when other food plants were scarce. A soup made from the young shoots is considered a spring delicacy in Denmark and Sweden. Cooking or drying completely neutralises the toxic components found in this plant. After Stinging Nettle enters its flowering and seed setting stages the leaves develop gritty particles called "cystoliths", which can irritate the urinary tract.

Nutmeg or Myristica fragrans is an evergreen tree indigenous to the Banda Islands in the Moluccas of Indonesia, or Spice Islands. Until the mid 19th century this was the world's only source. The nutmeg tree is important for two spices derived from the fruit, nutmeg and mace. Nutmeg is the actual seed of the tree, roughly egg-shaped and about 20mm-30mm long and 15mm-18mm wide, and weighing between 5g and 10g dried, while mace is the dried "lacy" reddish covering or arillus of the seed. This is the only tropical fruit that is the source of two different spices. Several other commercial products are also produced from the trees, including essential oils, extracted oleoresins, and nutmeg butter. Nutmeg has anti-inflammatory properties and can be used to treat joint and muscle pain. The oil works particularly well for this when it is massaged into the affected area. It is an integral herb in Chinese medicine where it is used for stomach pain and inflammation as well as reducing joint swelling.

Onion is a term used for many plants in the genus Allium. They are known by the common name "onion" but, used without qualifiers, it usually refers to Allium cepa. Allium cepa is also known as the "garden onion" or "bulb" onion. It is grown underground by the plant as a vertical shoot that is used for food storage, leading to the possibility of confusion with a tuber, which it is not. Allium cepa is known only in cultivation, but related wild species occur in Central Asia. Wide-ranging claims have been made for the effectiveness of onions against conditions ranging from the common cold-heart disease, diabetes, osteoporosis, and other diseases. They contain chemical compounds believed to have anti-inflammatory, anticholesterol, anticancer, and antioxidant properties such as quercetin. However, it has not been conclusively demonstrated that increased consumption of onions is directly linked to health benefits. Some studies have shown that increased consumption of onions reduces the risk of head and neck cancers. In India some sects do not eat onion due to its alleged aphrodisiac properties. In many parts of the world, onions are used to heal blisters and boils. A traditional Maltese remedy for sea urchin wounds is to tie half a baked onion to the afflicted area overnight. In the morning, the spikes will be in the onion. In the United States, products that contain onion extract are used in the treatment of topical scars. Onions may be especially beneficial for women, who are at increased risk for osteoporosis as they go through menopause, by destroying osteoclasts so that they do not break down bone.

Oregano (Origanum vulgare) is a species of Origanum, native to Europe, the Mediterranean region and southern and central Asia. It is a perennial herb, growing to 20-80cm tall, with opposite leaves 1-4cm long. The flowers are purple, 3-4mm long, produced in erect spikes. Oregano is the anglicised form of the Italian word origano, which is also a derivation from the Greek origanon (oros="mountain" + the verb ganousthai=delight in"). Oregano is high in antioxidant activity, due to a high content of phenolic acids and flavonoids. Also, oregano has demonstrated antimicrobial activity against food-borne pathogens such as Listeria monocytogenes. Both of these characteristics may be useful in both health and food preservation. In the Philippines, oregano (Coleus aromaticus) is not commonly used for cooking but is rather considered as a medicinal plant, useful for relieving children's coughs. Main constituents include carvacrol, thymol, limonene, pinene, ocimene, and caryophyllene. The leaves and flowering stems are strongly antiseptic, antispasmodic, carminative, cholagogue, diaphoretic, emmenagogue, expectorant, stimulant, stomachic and mildly tonic. Aqueous extracts, capsules, or oil extracts of oregano are taken by mouth for the treatment of colds, influenza, mild fevers, fungal infections, indigestion, stomach upsets, enteric parasites,and painful menstruation. It is strongly sedative and should not be taken in large doses, though mild teas have a soothing effect and aid restful sleep. Used topically, oregano is one of the best antiseptics because of its high thymol content.

Black pepper (Piper nigrum) is a flowering vine in the family Piperaceae, cultivated for its fruit, which is usually dried and used as a spice and seasoning. The fruit, known as a peppercorn when dried, is a small drupe five millimetres in diameter, dark red when fully mature, containing a single seed. Peppercorns, and the powdered pepper derived from grinding them, may be described as black pepper, white pepper, red/pink pepper, green pepper, and very often simply pepper. The terms pink peppercorns, red pepper, and green pepper are also used to describe the fruits of other, unrelated plants. Black pepper is native to South India (Tamil:milagu; Kannada:menasu; Malayalam:kurumulaku; Telugu:miriyam; Konkani:miriya konu;) and is extensively cultivated there and elsewhere in tropical regions. Black pepper is also cultivated in the Coorg area of Karnataka. The spiciness of black pepper is due to the chemical piperine. Dried ground pepper is one of the most common spices in European cuisine and its descendants, having been known and prized since antiquity for both its flavour and its use as a medicine. It may be found on nearly every dinner table in some parts of the world, often alongside table salt.

Parsley (Petroselinum crispum) is a bright green, biennial herb, also used as spice. It is very common in Middle Eastern, European, and American cooking. Parsley is used for its leaf in much the same way as coriander (which is also known as Chinese parsley or cilantro), although it has a milder flavour than coriander. In Central and Eastern Europe and in West Asia, many dishes are served with fresh green chopped parsley sprinkled on top. Green parsley is often used as a garnish. The fresh flavour of the green parsley goes extremely well with potato dishes, rice dishes (risotto or pilaf) or vegetable stews. In Southern and Central Europe, parsley is part of bouquet garni, a bundle of fresh herbs used to flavour stocks, soups, and sauces. Freshly chopped green parsley is used as a topping for soups and green salads. Parsley is a key ingredient in several West Asian salads, e.g., tabbouleh (the national dish of Lebanon). Persillade is mixture of chopped garlic and chopped parsley in the French cuisine. Italian Gremolata is a mixture of parsley, garlic, and lemon zest. Also, the consumption of parsley is thought to contribute to sweet smelling breath. Root parsley is very common in Central and Eastern European cuisines, where it is used as a soup vegetable in many soups and in stews and casseroles.
